Our farm-to-table philosophy begins in the vineyards, olive orchards and gardens that surround you. Step into our historic Acetaia di Canossa and discover the quiet maturation of traditional balsamic vinegar.

Venturini Baldini wine tasting
In the cool, historic wine cellar of the seventeenth-century Dimora Ancini, our expert sommeliers guide guests through a curated tasting of Venturini Baldini’s award-winning wines. From the distinctive expressions of Lambrusco to refined sparkling and still selections, each wine is presented with context, technique, and insight into the estate’s organic philosophy. Tastings are paired with select local specialities.

Balsamic experience
Established among the oldest acetaias in the region - and today one of the largest producers in the area - our Acetaia di Canossa carries forward a tradition defined by time, patience, and precision. Join us for a guided tasting tour in the historic acetaia, where wooden barrels quietly age and refine the Aceto Balsamico Tradizionale over decades. The experience concludes with a tasting paired with aged Parmigiano Reggiano, allowing the depth, balance, and complexity of each drop to fully reveal itself.

Fresh pasta cooking class
Our estate chef will let you in to the culinary secrets of the Food Valley in a fresh pasta cooking class. Learn how to create the famous Cappelletti and Tagliatelle of Emilia and transform the best of our local produce into a delicious Italian meal. Enjoy your own creations in a family-style private lunch.

Gourmet Picnic
A basket prepared with care, a blanket laid among the vines, and time set aside for nothing but pleasure. Our gourmet picnic brings together estate wines and a selection of regional delicacies, thoughtfully arranged and ready to be enjoyed in one of Roncolo’s most scenic corners.

Local farmer visits
Discover the typical specialities of the Food Valley in a guided tour to local farmers. From dairies of Parmigiano Reggiano to producers of Prosciutto di Parma, these visits are a unique opportunity to meet the makers and see the origins of authentic Emilian farm produce.
Sports & Wellness
Roncolo provides a green sanctuary from modern hectic life, offering the chance to switch off and fall back into a slower way of being. Refocus and recenter with private yoga lessons, trekking or biking in the surrounding Parco di Roncolo. For sportier activities we offer private training sessions in our gym, as well as off-site sports activities like tennis, horseback-riding or golf.
Trekking & Biking
Our 130 hectare estate is surrounded by a natural preservation area, the Parco di Roncolo, and offers many kilometers of trails to discover the natural beauty of the Apennine mountain range. For lovers of trekking and hiking, guided tours are available. Mountain bikes and electric bikes are available for rent to explore the Apennine countryside.
Golfing
Just ten minutes from the estate, the 18-hole Terre di Canossa Golf Club offers a technically engaging course set within the rolling landscape of the region.
For those wishing to extend their play, further member clubs of the Emilia Golf experience and the renowned Modena Golf & Country Club can be reached within thirty-to-forty minutes' drive from the estate.
Our team will be pleased to arrange tee times and green fees, ensuring a seamless experience from arrival to final putt.
Tennis & Horseback Riding
For guests who enjoy tennis or equestrian pursuits, courts and riding facilities are located within short distance of the estate.
Whether you wish to refine your technique with private instruction or simply enjoy a match on clay, tennis sessions can be arranged to suit your level and pace.
Equally, horseback riding offers the choice between guided lessons and leisurely rides through the surrounding countryside- a graceful way to experience the landscape from a different perspective.
